Flavor seasoning RosDee – In this recipe, I used pork flavor seasoning.Light soy sauce – Gives a salty taste to the pork gravy. ![]() Dark soy sauce – Used to flavor the noodles and to give them a dark color.Soybean paste – Soybean paste is made of fermented soy beans, and I use it for extra flavor.The stems have a “peel” which should be removed before eaten. Chinese broccoli – Chinese broccoli, or Chinese kale, is much different than regular broccoli.Before using, make sure to soak the rice vermicelli noodles in water at room temperature until they become soft. If you are having trouble finding them, you can replace them with rice vermicelli. Fresh flat rice noodles – These are the kind of noodles that are used to make a traditional rad na meal.Egg – Adding an egg to the marinade helps to make the meat even more tender and adds a rich flavor.Palm sugar – Used to give a sweet taste to the meat.For the pork meat to become juicy and tender, which is a must for any rad na recipe, tapioca starch is added to the marinade. Tapioca starch – Substitutable with cornstarch.It’s a thick sauce that adds a sweet and salty taste to stir-fries, dipping sauces, and meat marinades. Oyster sauce – Oyster sauce is often used inside the Thai kitchen to marinate meat.Tenderloin pork – The pork meat can be substituted for beef, chicken, shrimp, squid, basically anything! Some Thai people like to combine all sorts of meat and seafood in rad na.I didn’t use fish sauce in this recipe, I used other traditional flavoring ingredients like soy sauce and oyster sauce, and it comes out just perfect! Ingredientsįirst things first, the meat has to be flavored with a tasty marinade. We commonly use Chinese kale, which is also known as gai lan, in Thai cuisine. It has origins in both nations and combines Thai and Chinese cuisine, yum! If this is traditional Thai style food, then why does it contain Chinese kale? And why is there no fish sauce used?ĭon’t worry, many street vendors sell this food, and it is undoubtedly Thai. Another well known meal in Southeast Asia that uses this kind of soft noodles is called “ pad see ew“. Using this kind of noodles are a MUST if you want to serve this hearty meal like they do in Thai restaurants! However, some versions of rad na use rice vermicelli instead. The noodles that you should purchase are called “ fresh flat rice noodles” or “ sen yai” and can be found at Asian grocery stores. I’m not sure why, because in my opinion, these fresh rice noodles are definitely not inferior to the thin rice noodles that are found in pad Thai. Unlike pad Thai, which is an extremely popular noodle dish. Rad na (also written rat na, lad na or rad nah) is one of those Thai noodle dishes that are not so easily thought of. But (of course) I always add some crushed dry chili pepper on top of it, to add spice and enhance the flavor. In my opinion, this is one of the best and most unique Thai dishes. Just make sure it’s tender and cut into bite-sized pieces. But, you can cook it with any meat of your choice another popular option is chicken (rad na gai). The main protein source for this comfort food in Thailand is mostly pork meat (rad na moo). Inside the gravy, you can enjoy the pieces of tender pork meat that’s drenched in Thai flavors. Rad na is a tasty noodle dish made with wide flat rice noodles and a soup-like gravy. ![]()
